1000 grit Japanese waterstone for a clean working edge

The Naniwa Gouken Deluxe 1000 is a medium-grit Japanese waterstone for establishing a sharp working edge after coarse repair work, or refreshing dull knives, chisels and carbon steel tools before finishing.

This is the main sharpening stone in a simple setup. It removes steel faster than a finishing stone, but leaves a cleaner edge than a coarse repair stone. Use it after #220 repair work, then move to a #4000 finishing stone if you want a more refined edge.

Where it fits in the sharpening sequence

  • #220 coarse: repair chips and reset damaged bevels.
  • #1000 medium: create the clean working edge.
  • #4000 finishing: refine and polish the edge after the 1000 grit stage.

Soak for about 10 minutes before use, sharpen with water only, rinse slurry as needed and allow the stone to dry naturally in the shade. Keep the surface flat with a flattening stone.
